For the Crust:

  • 1 (8-ounce) wheel of brie cheese
  • 2 medium apples (such as Honeycrisp or Granny Smith), peeled and thinly sliced
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1 tablespoon fresh thyme leaves, plus extra for garnish
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • Crackers or sliced baguette for serving

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350°F (175°C). Place the brie wheel on a parchment-lined baking sheet or in a small oven-safe dish.
  2. In a skillet over medium heat, melt the butter. Add the apple slices and cook for 5-7 minutes until softened.
  3. Stir in the brown sugar, thyme, cinnamon, and salt. Cook for another 3-5 minutes until the apples are caramelized and syrupy.
  4. Spoon the caramelized apple mixture over the top of the brie wheel, spreading it evenly.
  5. Bake for 15-20 minutes, until the brie is soft and slightly melted. Garnish with extra thyme.
  6. Serve immediately with crackers or sliced baguette for dipping.
