For the Crust:
- 2 cups low-fat cottage cheese
- 2 large eggs
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 cup fresh strawberries, sliced
- Cooking spray or butter for greasing
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a muffin tin with cooking spray or butter.
- In a blender or food processor, combine cottage cheese, eggs, honey, vanilla extract, and cinnamon. Blend until smooth.
- Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 25-30 minutes, or until the tops are golden brown and set.
- Let cool for 5 minutes, then gently remove from the tin. Top with fresh strawberry slices before serving.
