A light and protein-packed breakfast or snack, featuring creamy cottage cheese baked into golden cups and topped with sweet, fresh strawberries.

For the Crust:

  • 2 cups low-fat cottage cheese
  • 2 large eggs
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 cup fresh strawberries, sliced
  • Cooking spray or butter for greasing

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a muffin tin with cooking spray or butter.
  2. In a blender or food processor, combine cottage cheese, eggs, honey, vanilla extract, and cinnamon. Blend until smooth.
  3. Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  4. Bake for 25-30 minutes, or until the tops are golden brown and set.
  5. Let cool for 5 minutes, then gently remove from the tin. Top with fresh strawberry slices before serving.
