A delightful appetizer featuring flaky puff pastry wrapped around creamy feta, baked until golden, and drizzled with a sweet-tart cranberry honey sauce.

For the Crust:
- 1 sheet puff pastry, thawed
- 8 oz feta cheese, crumbled
- 1 egg, beaten (for egg wash)
- 1/2 cup fresh cranberries
- 1/4 cup honey
- 1 tbsp lemon juice
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
- Olive oil for brushing
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out puff pastry on a lightly floured surface. Cut into 8 equal rectangles.
- Place a spoonful of crumbled feta in the center of each rectangle. Fold pastry over filling, sealing edges with a fork. Brush with egg wash.
- Bake for 20-25 minutes until puffed and golden brown.
- While baking, combine cranberries, honey, and lemon juice in a small saucepan. Simmer over medium heat until cranberries burst and sauce thickens, about 10 minutes. Stir in thyme.
- Serve rolls warm, drizzled with cranberry honey sauce.
