For the Crust:
- 1 large golden beet, peeled and thinly sliced
- 1 pre-made flatbread crust
- 4 oz brie cheese, sliced
- 2 tbsp honey
- 1 tbsp fresh orange juice
- 1/4 cup sliced almonds, toasted
- 2 tbsp olive oil
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss sliced beets with 1 tbsp olive oil, salt, and pepper. Roast for 20 minutes until tender.
- Brush flatbread crust with remaining olive oil. Arrange roasted beets and brie slices evenly over the crust.
- Bake flatbread for 8-10 minutes until crust is golden and cheese is melted.
- Whisk together honey and orange juice. Drizzle over baked flatbread, then sprinkle with toasted almonds and fresh thyme.
- Slice and serve warm.
