For the Crust:

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup coconut milk
  • 2 tbsp lime juice
  • 1 tbsp lime zest
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 1/2 tsp turmeric
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

1. Prepare the Crust:

  1. Season chicken pieces with salt, pepper, and turmeric.
  2. Heat oil in a large skillet over medium-high heat. Add chicken and cook until golden brown on all sides, about 6-8 minutes.
  3. Reduce heat to medium. Add garlic and ginger, sauté for 1 minute until fragrant.
  4. Pour in coconut milk, lime juice, lime zest, soy sauce, and honey. Stir to combine.
  5. Simmer for 10-12 minutes, stirring occasionally, until sauce thickens and chicken is cooked through.
  6. Garnish with fresh cilantro and serve warm.
