A festive and elegant appetizer featuring roasted pear halves topped with creamy whipped feta, tart ruby cranberries, and a warm honey drizzle.

For the Crust:
- 3 ripe but firm pears, halved and cored
- 1 cup fresh cranberries
- 8 oz feta cheese, crumbled
- 1/4 cup Greek yogurt
- 1/4 cup honey, plus extra for drizzling
- 1 tbsp olive oil
- 1 tsp fresh thyme leaves
- 1/4 tsp ground cinnamon
- Salt and black pepper to taste
- 1/4 cup chopped walnuts for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Arrange pear halves cut-side up on a baking sheet. Drizzle with olive oil and sprinkle with cinnamon, salt, and pepper. Roast for 20-25 minutes until tender and golden.
- In a food processor, combine feta, Greek yogurt, and a pinch of black pepper. Blend until smooth and creamy. Set aside.
- In a small saucepan, combine cranberries and 1/4 cup honey. Cook over medium heat until cranberries burst and sauce thickens slightly, about 5-7 minutes. Remove from heat.
- To serve, spread a dollop of whipped feta on each pear half. Top with cranberry sauce, a drizzle of warm honey, and a sprinkle of thyme and walnuts.
