For the Crust:
- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 tablespoons olive oil
- Juice and zest of 1 lemon
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 1/4 cup all-purpose flour
- Cooking spray (for air fryer basket)
Instructions
1. Prepare the Crust:
- In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, paprika, salt, and pepper. Add chicken pieces and toss to coat. Marinate for 10 minutes.
- Preheat air fryer to 400°F (200°C). Lightly coat the air fryer basket with cooking spray.
- Place flour in a shallow dish. Dredge each marinated chicken piece in flour, shaking off excess.
- Arrange chicken bites in a single layer in the air fryer basket. Cook for 10-12 minutes, flipping halfway through, until golden brown and cooked through.
- Serve immediately with extra lemon wedges if desired.
