Description

A golden, glossy, and bursting with cranberries bread that begs to be shared.


Ingredients

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup orange juice
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tablespoon orange zest
  • 1 1/2 cups fresh cranberries
  • 1/2 cup chopped walnuts (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix orange juice, vegetable oil, egg, and orange zest.
  4. Pour wet ingredients into dry ingredients and stir until just combined. Fold in cranberries and walnuts.
  5. Pour batter into prepared pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  6. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

You can customize the seasonings to taste.
