For the Crust:

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1 large egg, beaten
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine ground chicken, breadcrumbs, egg, garlic, rosemary, lemon zest, lemon juice, Parmesan, salt, and pepper. Mix gently until just combined.
  2. Form the mixture into 4-6 equal-sized patties, about 1/2 inch thick.
  3. Heat olive oil in a large skillet over medium heat. Add patties and cook for 5-7 minutes per side, until golden brown and cooked through (internal temperature of 165°F).
  4. Transfer patties to a plate lined with paper towels to drain excess oil. Garnish with fresh parsley and serve warm.
