For the Crust:
- 1 lb ground chicken
- 1/4 cup breadcrumbs
- 1 large egg, beaten
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped
- Zest of 1 lemon
- 2 tablespoons lemon juice
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- In a large bowl, combine ground chicken, breadcrumbs, egg, garlic, rosemary, lemon zest, lemon juice, Parmesan, salt, and pepper. Mix gently until just combined.
- Form the mixture into 4-6 equal-sized patties, about 1/2 inch thick.
- Heat olive oil in a large skillet over medium heat. Add patties and cook for 5-7 minutes per side, until golden brown and cooked through (internal temperature of 165°F).
- Transfer patties to a plate lined with paper towels to drain excess oil. Garnish with fresh parsley and serve warm.
