For the Crust:
- 1 lb fresh salmon fillet, cooked and flaked
- 2 cups fresh spinach, finely chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup plain breadcrumbs
- 1 large egg, beaten
- 2 tbsp fresh dill, chopped
- 1 tsp lemon zest
- 2 tbsp olive oil
- 1/2 cup Greek yogurt
- 1 tbsp lemon juice
- 1 garlic clove, minced
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine flaked salmon, spinach, feta, breadcrumbs, egg, dill, lemon zest, salt, and pepper. Mix gently until well combined.
- Form the mixture into 8 equal-sized patties, about 1/2-inch thick.
- Heat olive oil in a large skillet over medium heat. Cook patties for 4-5 minutes per side, until golden brown and heated through.
- In a small bowl, whisk together Greek yogurt, lemon juice, minced garlic, and a pinch of salt to make the sauce.
- Serve salmon cakes warm with a drizzle of the creamy yogurt sauce.
