For the Crust:
- 4 large croissants, day-old preferred
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
- 1 tablespoon honey, for drizzling
- Mint leaves for garnish (optional)
Instructions
1. Prepare the Crust:
- Slice the croissants in half horizontally, being careful not to cut all the way through.
- In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Gently fold in half of the mixed berries into the whipped cream.
- Spoon the berry cream mixture generously into each croissant.
- Top with the remaining fresh berries and drizzle with honey.
- Garnish with mint leaves if desired and serve immediately.
