A festive and flavorful salmon dish featuring a sweet-tart cranberry glaze that caramelizes beautifully in the oven, perfect for holiday dinners or special occasions.

For the Crust:

  • 4 salmon fillets (6 oz each)
  • 1 cup fresh or frozen cranberries
  • 1/4 cup honey
  • 2 tbsp orange juice
  • 1 tbsp soy sauce
  • 1 tsp grated ginger
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh thyme for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small saucepan, combine cranberries, honey, orange juice, soy sauce, ginger, and garlic. Simmer over medium heat for 8-10 minutes until cranberries burst and sauce thickens slightly.
  3. Place salmon fillets on the baking sheet. Brush with olive oil and season with salt and pepper.
  4. Spoon the cranberry glaze generously over each salmon fillet, reserving some for serving.
  5. Bake for 12-15 minutes until salmon is cooked through and flakes easily with a fork.
  6. Garnish with fresh thyme and serve with extra glaze on the side.
