For the Crust:
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 2 cups fresh pineapple chunks
- 1 cup jasmine rice, rinsed
- 2 cups water
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1/2 tsp turmeric powder
- Salt and black pepper to taste
- 2 green onions, sliced for garnish
Instructions
1. Prepare the Crust:
- Cook the jasmine rice by combining it with water in a saucepan, bringing to a boil, then reducing heat to low, covering, and simmering for 15 minutes until fluffy.
- In a large skillet or wok, heat vegetable oil over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 6-8 minutes.
- Add garlic, ginger, and turmeric to the skillet, stirring for 1 minute until fragrant. Stir in pineapple chunks and cook for 3-4 minutes until slightly caramelized.
- Pour in soy sauce and honey, stirring to coat the chicken and pineapple. Simmer for 2 minutes until the sauce thickens slightly.
- Season with salt and pepper to taste. Serve the pineapple chicken over the cooked jasmine rice, garnished with sliced green onions.
