For the Crust:
- 1 wheel Brie cheese (8 oz), chilled
- 1 cup shelled pistachios, finely chopped
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1/2 cup raspberry preserves
- 1 tbsp water
- 1 tbsp honey
- Vegetable oil for frying
- Salt to taste
Instructions
1. Prepare the Crust:
- Cut the chilled Brie into 1-inch cubes, discarding the rind if desired.
- Dredge each Brie cube in flour, dip in beaten egg, then coat thoroughly with chopped pistachios.
- Heat oil in a deep skillet to 350°F (175°C) and fry bites in batches until golden, about 1-2 minutes. Drain on paper towels.
- In a small saucepan, warm raspberry preserves with water and honey until smooth. Drizzle over the fried Brie bites before serving.
