Description

Crispy pan-fried polenta rounds topped with creamy Gorgonzola, sweet sautéed pears, and a crunchy walnut topping for a savory-sweet appetizer or light meal.

For the Crust:

  • 1 tube (18 oz) pre-cooked polenta, sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • 1 ripe pear, cored and thinly sliced
  • 1 tbsp butter
  • 1 tsp honey
  • 4 oz Gorgonzola cheese, crumbled
  • 1/4 cup walnuts, chopped and toasted
  • 1 tbsp fresh thyme leaves
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium-high heat. Add polenta rounds and cook for 3-4 minutes per side until golden and crispy. Transfer to a baking sheet.
  2. In the same skillet, melt butter over medium heat. Add pear slices and honey, sautéing for 2-3 minutes until softened and lightly caramelized. Remove from heat.
  3. Preheat broiler. Top each polenta round with Gorgonzola crumbles. Broil for 1-2 minutes until cheese is melted and bubbly.
  4. Arrange polenta rounds on a serving platter. Spoon sautéed pears over each round, then sprinkle with toasted walnuts and fresh thyme. Season with salt and pepper to taste.
