For the Crust:
- 1 sheet frozen puff pastry, thawed
- 2 ripe pears, peeled, cored, and diced
- 2 tablespoons unsalted butter
- 2 tablespoons brown sugar
- 1/4 teaspoon ground cinnamon
- 4 ounces Gorgonzola cheese, crumbled
- 4 ounces cream cheese, softened
- 2 tablespoons heavy cream
- 1 tablespoon honey
- Fresh thyme leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Cut puff pastry into 12 squares and press into a mini muffin tin to form cups. Bake for 12-15 minutes until golden and puffed. Let cool.
- In a skillet over medium heat, melt butter. Add pears, brown sugar, and cinnamon. Cook for 8-10 minutes, stirring occasionally, until pears are soft and caramelized. Remove from heat.
- In a mixing bowl, combine Gorgonzola, cream cheese, heavy cream, and honey. Whip with an electric mixer until smooth and fluffy.
- Spoon a small amount of whipped Gorgonzola into each puff pastry cup. Top with caramelized pears and garnish with fresh thyme. Serve warm.
