Description

A simple yet elegant brunch or appetizer featuring crispy sourdough, rich burrata cheese, sweet blistered tomatoes, and a tangy balsamic glaze.

For the Crust:

  • 4 thick slices sourdough bread
  • 1 ball burrata cheese (about 8 oz)
  • 1 pint cherry tomatoes
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 1 tbsp honey
  • Fresh basil leaves for garnish
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss cherry tomatoes with 1 tbsp olive oil, salt, and pepper on a baking sheet. Roast for 15-20 minutes until blistered and softened.
  2. While tomatoes roast, heat balsamic vinegar and honey in a small saucepan over medium heat. Simmer for 5-7 minutes until reduced to a syrupy glaze. Set aside to cool slightly.
  3. Brush sourdough slices with remaining olive oil and toast in a skillet or toaster until golden and crispy on both sides. Rub each slice with minced garlic while warm.
  4. Place toasted sourdough on plates. Tear burrata into pieces and divide among toasts. Top with blistered tomatoes.
  5. Drizzle with balsamic glaze, garnish with fresh basil, and season with additional salt and pepper if desired. Serve immediately.
