For the Crust:
- 1 can (14.75 oz) pink salmon, drained and flaked
- 1/2 cup finely chopped green onions
- 1/4 cup plain breadcrumbs
- 1 large egg, beaten
- 2 tablespoons mayonnaise
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil for frying
Instructions
1. Prepare the Crust:
- In a large bowl, combine the flaked salmon, green onions, breadcrumbs, egg, mayonnaise, lemon juice, lemon zest, garlic powder, and black pepper. Mix gently until well combined.
- Form the mixture into 4 equal-sized patties, about 1/2-inch thick.
- Heat the vegetable oil in a large skillet over medium heat. Carefully add the patties and cook for 4-5 minutes per side, until golden brown and crispy.
- Transfer the cooked patties to a paper towel-lined plate to drain any excess oil. Serve warm with lemon wedges or your favorite dipping sauce.
