A vibrant, sweet-savory breakfast or brunch toast featuring creamy avocado, juicy persimmon slices, tangy feta, and a warm ginger-honey drizzle.

For the Crust:

  • 4 slices of thick sourdough bread, toasted
  • 2 ripe avocados, mashed
  • 1 ripe Fuyu persimmon, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons honey
  • 1 teaspoon fresh ginger, finely grated
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Red pepper flakes (optional)
  • Fresh mint leaves for garnish

Instructions

1. Prepare the Crust:

  1. Toast the sourdough slices until golden and crisp.
  2. In a small bowl, mix the mashed avocado with a pinch of salt and black pepper. Spread evenly on each toast.
  3. Arrange the persimmon slices over the avocado like jewels.
  4. Sprinkle crumbled feta cheese on top.
  5. In a small saucepan, warm the honey and grated ginger over low heat for 1-2 minutes until fragrant. Drizzle over the toasts.
  6. Finish with a drizzle of olive oil, a sprinkle of red pepper flakes (if using), and garnish with fresh mint leaves.
