For the Crust:
- 4 slices of thick sourdough bread, toasted
- 2 ripe avocados, mashed
- 1 ripe Fuyu persimmon, thinly sliced
- 1/2 cup crumbled feta cheese
- 2 tablespoons honey
- 1 teaspoon fresh ginger, finely grated
- 1 tablespoon olive oil
- Salt and black pepper to taste
- Red pepper flakes (optional)
- Fresh mint leaves for garnish
Instructions
1. Prepare the Crust:
- Toast the sourdough slices until golden and crisp.
- In a small bowl, mix the mashed avocado with a pinch of salt and black pepper. Spread evenly on each toast.
- Arrange the persimmon slices over the avocado like jewels.
- Sprinkle crumbled feta cheese on top.
- In a small saucepan, warm the honey and grated ginger over low heat for 1-2 minutes until fragrant. Drizzle over the toasts.
- Finish with a drizzle of olive oil, a sprinkle of red pepper flakes (if using), and garnish with fresh mint leaves.
