For the Crust:
- 2 large sweet potatoes, peeled and sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika
- 4 ounces goat cheese, softened
- 1/4 cup fig jam
- 1/2 cup pecans, toasted and roughly chopped
- Fresh thyme leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, toss sweet potato rounds with olive oil, salt, pepper, and smoked paprika until evenly coated. Arrange in a single layer on the baking sheet.
- Roast for 20-25 minutes, flipping halfway, until golden and tender. Remove from oven and let cool slightly.
- Top each sweet potato round with a small dollop of goat cheese, followed by a teaspoon of fig jam and a sprinkle of toasted pecans.
- Garnish with fresh thyme leaves and serve warm.
