For the Crust:
- 2 large sweet potatoes, sliced into 1/4-inch rounds
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 8 ounces brie cheese, rind removed and cut into small pieces
- 1/2 cup dried cranberries
- 1/4 cup hot honey (store-bought or homemade)
- Fresh thyme leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss sweet potato rounds with olive oil, salt, pepper, and garlic powder until evenly coated. Arrange in a single layer on the baking sheet.
- Roast for 20-25 minutes, flipping halfway through, until golden and tender.
- Remove from oven and top each round with a piece of brie. Return to oven for 3-5 minutes until brie is melted.
- Sprinkle with dried cranberries, drizzle with hot honey, and garnish with fresh thyme. Serve warm.
