For the Crust:
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 ounces brie cheese, sliced into small pieces
- 4 fresh figs, sliced
- 1/2 cup candied pecans, chopped
- 2 tablespoons honey
- 1 teaspoon fresh thyme leaves
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet. Roast for 20-25 minutes until golden and tender.
- Remove from oven and top each round with a slice of brie. Return to oven for 3-5 minutes until brie is slightly melted.
- Arrange on a serving platter. Top each round with fig slices and candied pecans. Drizzle with honey and sprinkle with thyme leaves before serving.
