For the Crust:
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces brie cheese, sliced
- 4 fresh figs, sliced
- 1/2 cup candied pecans
- 2 tablespoons honey
- Fresh thyme leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet and roast for 20-25 minutes until golden and tender.
- Remove from oven and top each round with a slice of brie. Return to oven for 3-5 minutes until brie is slightly melted.
- Arrange on a serving platter, top with fig slices and candied pecans. Drizzle with honey and garnish with thyme leaves before serving.
