For the Crust:
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 2 tbsp olive oil
- Salt and black pepper to taste
- 4 oz brie cheese, sliced
- 4 fresh figs, sliced
- 1/2 cup candied pecans
- 2 tbsp honey
- Fresh thyme leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss sweet potato rounds with olive oil, salt, and pepper, then arrange on a baking sheet.
- Roast for 20-25 minutes, flipping halfway, until golden and tender.
- Top each round with a slice of brie and return to oven for 3-4 minutes until cheese is melted.
- Remove from oven and top with fig slices, candied pecans, a drizzle of honey, and fresh thyme.
