A stunning appetizer featuring roasted sweet potato rounds topped with creamy brie, fresh fig slices, and crunchy candied pecans.


Ingredients

For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 4 oz brie cheese, sliced
  • 4 fresh figs, sliced
  • 1/2 cup candied pecans
  • 2 tbsp honey
  • Fresh thyme leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss sweet potato rounds with olive oil, salt, and pepper, then arrange on a baking sheet.
  2. Roast for 20-25 minutes, flipping halfway, until golden and tender.
  3. Top each round with a slice of brie and return to oven for 3-4 minutes until cheese is melted.
  4. Remove from oven and top with fig slices, candied pecans, a drizzle of honey, and fresh thyme.

Notes

You can customize the seasonings to taste.
