A savory, crowd-pleasing casserole loaded with ground beef, cheese, and crispy tater tots that disappears so fast you’ll barely have time to serve seconds.

For the Crust:
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1 bag (32 oz) frozen tater tots
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 2 tbsp chopped fresh parsley (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a skillet over medium heat, cook ground beef, onion, and garlic until beef is browned and onion is soft. Drain excess fat.
- Stir in cream of mushroom soup, sour cream, salt, pepper, and paprika until well combined. Remove from heat.
- Spread the beef mixture evenly in the prepared baking dish. Sprinkle 1 cup of shredded cheddar cheese on top.
- Arrange frozen tater tots in a single layer over the cheese and beef mixture.
- Bake for 30-35 minutes, or until tater tots are golden and crispy.
- Remove from oven, sprinkle with remaining 1 cup of cheddar cheese and parsley (if using). Let cool for 5 minutes before serving.
