For the Crust:

  • 1 (15 oz) can pumpkin puree
  • 1/2 cup apple cider
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1 tbsp lemon juice

Instructions

1. Prepare the Crust:

  1. Combine pumpkin puree, apple cider, brown sugar, maple syrup, cinnamon, ginger, nutmeg, cloves, and salt in a medium saucepan.
  2. Cook over medium heat, stirring frequently, until the mixture comes to a gentle simmer.
  3. Reduce heat to low and continue to cook, stirring occasionally, for 25-30 minutes until thickened and fragrant.
  4. Remove from heat and stir in lemon juice. Let cool completely before transferring to jars.
