For the Crust:
- 1 (15 oz) can pumpkin puree
- 1/2 cup apple cider
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/4 tsp salt
- 1 tbsp lemon juice
Instructions
1. Prepare the Crust:
- Combine pumpkin puree, apple cider, brown sugar, maple syrup, cinnamon, ginger, nutmeg, cloves, and salt in a medium saucepan.
- Cook over medium heat, stirring frequently, until the mixture comes to a gentle simmer.
- Reduce heat to low and continue to cook, stirring occasionally, for 25-30 minutes until thickened and fragrant.
- Remove from heat and stir in lemon juice. Let cool completely before transferring to jars.
