For the Crust:
- 1 lb ground beef
- 2 medium zucchinis, diced
- 1 cup uncooked long-grain rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp dried dill
- Salt and black pepper to taste
- 2 cups beef broth
- 1/2 cup plain Greek yogurt
- 1/2 cucumber, grated and drained
- 1 tbsp lemon juice
- 1 tbsp olive oil
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Cook rice according to package instructions using beef broth instead of water for added flavor.
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
- Add ground beef to the skillet, breaking it up with a spoon. Cook until browned, then stir in oregano, dill, salt, and pepper.
- Add diced zucchini to the skillet and cook for 5-7 minutes until tender.
- In a small bowl, mix Greek yogurt, grated cucumber, and lemon juice to make the tzatziki sauce.
- To serve, divide rice among bowls, top with the beef and zucchini mixture, drizzle with tzatziki, and garnish with fresh parsley.
