For the Crust:

  • 1 lb ground beef
  • 2 medium zucchinis, diced
  • 1 cup uncooked long-grain white rice
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried dill
  • Salt and black pepper to taste
  • 2 cups beef broth
  • 1/2 cup plain Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 tbsp lemon juice
  • 1 tbsp fresh mint, chopped
  • Olive oil for cooking

Instructions

1. Prepare the Crust:

  1. Cook rice according to package instructions using beef broth instead of water for added flavor.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  3. Add ground beef to the skillet, breaking it up with a spoon. Cook until browned, then stir in oregano, dill, salt, and pepper.
  4. Add diced zucchini to the skillet and cook until tender, about 5-7 minutes.
  5. In a small bowl, mix Greek yogurt, grated cucumber, lemon juice, and mint to make the tzatziki sauce.
  6. To serve, divide cooked rice among bowls, top with the beef and zucchini mixture, and drizzle with tzatziki sauce.

Notes

You can customize the seasonings to taste.
