Description

A flavorful and healthy one-bowl meal featuring seasoned ground beef, tender zucchini, and fluffy rice, all topped with a creamy tzatziki sauce.

For the Crust:

  • 1 lb ground beef
  • 2 medium zucchinis, diced
  • 1 cup uncooked long-grain white rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried dill
  • 1/4 cup fresh parsley, chopped
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook rice according to package instructions and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onion and cook until softened, about 3-4 minutes.
  3. Add ground beef to the skillet and cook until browned, breaking it up with a spoon. Stir in garlic, oregano, dill, salt, and pepper.
  4. Add diced zucchini to the skillet and cook for 5-7 minutes, until tender but still slightly crisp.
  5. In a small bowl, mix Greek yogurt, grated cucumber, lemon juice, and a pinch of salt to make the tzatziki sauce.
  6. To serve, divide rice among bowls, top with the beef and zucchini mixture, drizzle with tzatziki sauce, and garnish with fresh parsley.

Notes

You can customize the seasonings to taste.
