For the Crust:
- 1 lb ground beef
- 2 medium zucchinis, diced
- 1 cup uncooked long-grain white rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp dried dill
- 1/4 cup fresh parsley, chopped
- 1 cup plain Greek yogurt
- 1/2 cucumber, grated and drained
- 1 tbsp lemon juice
- 1 tbsp olive oil
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Cook rice according to package instructions and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion and cook until softened, about 3-4 minutes.
- Add ground beef to the skillet and cook until browned, breaking it up with a spoon. Stir in garlic, oregano, dill, salt, and pepper.
- Add diced zucchini to the skillet and cook for 5-7 minutes, until tender but still slightly crisp.
- In a small bowl, mix Greek yogurt, grated cucumber, lemon juice, and a pinch of salt to make the tzatziki sauce.
- To serve, divide rice among bowls, top with the beef and zucchini mixture, drizzle with tzatziki sauce, and garnish with fresh parsley.
