Description

A fresh and flavorful deconstructed gyro bowl featuring seasoned grilled chicken, crisp vegetables, and a creamy garlic sauce, all served over fluffy rice or greens.

For the Crust:

  • 1 lb boneless, skinless chicken thighs, cut into strips
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 2 cups cooked rice or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 4 oz feta cheese, crumbled
  • For the garlic sauce: 1/2 cup Greek yogurt, 2 cloves garlic, minced, 1 tbsp lemon juice, 1 tbsp chopped fresh dill, Salt to taste

Instructions

1. Prepare the Crust:

  1. In a bowl, combine chicken strips with olive oil, lemon juice, oregano, garlic powder, paprika, salt, and pepper. Marinate for at least 15 minutes.
  2. While chicken marinates, prepare the garlic sauce by mixing Greek yogurt, minced garlic, lemon juice, dill, and salt in a small bowl. Refrigerate until ready to serve.
  3. Heat a grill or skillet over medium-high heat. Cook chicken for 5-7 minutes per side until fully cooked and slightly charred.
  4. Assemble bowls by dividing rice or greens among four bowls. Top with cooked chicken, tomatoes, cucumber, red onion, olives, and feta cheese.
  5. Drizzle each bowl with garlic sauce and serve immediately.

Notes

You can customize the seasonings to taste.
