A light and flavorful Mediterranean-inspired bowl featuring juicy chicken meatballs seasoned with herbs, served over fluffy rice with a refreshing homemade tzatziki sauce.

For the Crust:

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried dill
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup uncooked white rice
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped
  • 1 tbsp olive oil
  • Lemon wedges and fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Cook the rice according to package instructions and set aside.
  2. In a bowl, combine ground chicken, breadcrumbs, egg, minced garlic, dried oregano, dried dill, salt, and pepper. Mix until just combined and form into 1-inch meatballs.
  3. Heat olive oil in a skillet over medium heat. Cook meatballs for 8-10 minutes, turning occasionally, until golden brown and cooked through.
  4. For the tzatziki, mix Greek yogurt, grated cucumber, lemon juice, and fresh dill in a bowl. Season with a pinch of salt.
  5. Assemble bowls by dividing rice among four bowls, topping with meatballs, a generous dollop of tzatziki, and garnish with lemon wedges and parsley.
