For the Crust:

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 large egg, lightly beaten
  • 1 cup Greek yogurt
  • 1/2 cup grated cucumber, squeezed dry
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh dill
  • 1 small garlic clove, minced
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine ground chicken, breadcrumbs, red onion, minced garlic, parsley, oregano, salt, pepper, and egg. Mix gently until just combined.
  2. Shape the mixture into 1-inch meatballs and arrange on a parchment-lined baking sheet.
  3. Bake at 400°F for 18-20 minutes, or until cooked through and lightly browned.
  4. For the tzatziki, stir together Greek yogurt, grated cucumber, lemon juice, dill, minced garlic, and salt in a small bowl.
  5. Serve meatballs warm with tzatziki sauce on the side or drizzled over the top.
