For the Crust:

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1 large egg, beaten
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup Greek yogurt
  • 1/2 cup grated cucumber, squeezed dry
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh dill
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, egg, red onion, 2 cloves minced garlic, parsley, oregano, 1/2 tsp salt, and pepper. Mix until just combined.
  3. Shape the mixture into 1-inch meatballs and place on the prepared baking sheet. Bake for 18-20 minutes, or until cooked through.
  4. While meatballs bake, prepare the tzatziki: In a medium bowl, mix Greek yogurt, grated cucumber, lemon juice, dill, 1 clove minced garlic, and 1/2 tsp salt until well combined.
  5. Serve the baked meatballs warm with the homemade tzatziki sauce drizzled on top or on the side.
