For the Crust:
- 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup plain Greek yogurt
- 1/2 cucumber, grated and drained
- 1 tbsp fresh dill, chopped
- 1 clove garlic, minced
- 1 tbsp lemon juice
- Salt and pepper to taste
- 2 cups cooked rice
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 4 pita breads, warmed
Instructions
1. Prepare the Crust:
- In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken cubes, toss to coat, and marinate for at least 30 minutes.
- Thread marinated chicken onto skewers and grill over medium-high heat for 10-12 minutes, turning occasionally, until cooked through.
- For the garlic sauce, mix Greek yogurt, grated cucumber, dill, minced garlic, lemon juice, salt, and pepper in a bowl. Refrigerate until ready to serve.
- Assemble bowls by dividing cooked rice among four bowls. Top with grilled chicken, cherry tomatoes, and red onion slices.
- Serve with warm pita bread and a generous drizzle of garlic sauce.
