For the Crust:
- 1 lb boneless, skinless chicken breast, cubed
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups cooked rice
- 1 cucumber, diced
- 2 tomatoes, chopped
- 1/2 red onion, thinly sliced
- 1/4 cup plain Greek yogurt
- 2 tbsp mayonnaise
- 1 clove garlic, grated
- 1 tbsp chopped fresh dill
Instructions
1. Prepare the Crust:
- In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken cubes, toss to coat, and marinate for at least 30 minutes.
- Thread marinated chicken onto skewers. Grill over medium-high heat for 10-12 minutes, turning occasionally, until cooked through.
- For the garlic sauce, mix Greek yogurt, mayonnaise, grated garlic, and dill in a small bowl. Refrigerate until ready to serve.
- Assemble bowls by dividing rice among four bowls. Top with grilled chicken, cucumber, tomatoes, and red onion. Drizzle with garlic sauce and serve.
