For the Crust:
- 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 oz feta cheese, crumbled
- 1/2 cup Greek yogurt
- 1 tbsp fresh dill, chopped
- 1 tbsp olive oil (for dip)
- Wooden skewers, soaked in water
- Pita bread, warmed and cut into wedges
- Cucumber slices
- Cherry tomatoes
- Kalamata olives
- Red onion, thinly sliced
- Lemon wedges for serving
Instructions
1. Prepare the Crust:
- In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken cubes, toss to coat, and marinate for at least 30 minutes.
- Thread marinated chicken onto soaked skewers. Grill or pan-sear over medium-high heat for 8-10 minutes, turning occasionally, until cooked through.
- For the feta dip, blend or mash feta cheese, Greek yogurt, dill, and olive oil until smooth. Adjust consistency with a splash of water if needed.
- Arrange the grilled chicken souvlaki skewers, feta dip, pita wedges, cucumber, tomatoes, olives, red onion, and lemon wedges on a large board or platter.
- Serve immediately, allowing guests to assemble their own bites with the dip and accompaniments.
