A vibrant and shareable grazing board featuring tender marinated chicken souvlaki skewers, creamy feta dip, and an assortment of fresh Mediterranean accompaniments.

For the Crust:

  • 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz feta cheese, crumbled
  • 1/2 cup Greek yogurt
  • 1 tbsp fresh dill, chopped
  • 1 tbsp olive oil (for dip)
  • Wooden skewers, soaked in water
  • Pita bread, warmed and cut into wedges
  • Cucumber slices
  • Cherry tomatoes
  • Kalamata olives
  • Red onion, thinly sliced
  • Lemon wedges for serving

Instructions

1. Prepare the Crust:

  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken cubes, toss to coat, and marinate for at least 30 minutes.
  2. Thread marinated chicken onto soaked skewers. Grill or pan-sear over medium-high heat for 8-10 minutes, turning occasionally, until cooked through.
  3. For the feta dip, blend or mash feta cheese, Greek yogurt, dill, and olive oil until smooth. Adjust consistency with a splash of water if needed.
  4. Arrange the grilled chicken souvlaki skewers, feta dip, pita wedges, cucumber, tomatoes, olives, red onion, and lemon wedges on a large board or platter.
  5. Serve immediately, allowing guests to assemble their own bites with the dip and accompaniments.
