A stunning layered salad featuring crisp vegetables, tangy feta, and a zesty lemon-oregano dressing, perfect for a light lunch or impressive appetizer.


Ingredients

For the Crust:

  • 2 large tomatoes, diced
  • 1 cucumber, peeled and diced
  • 1 red onion, thinly sliced
  • 1 green bell pepper, diced
  • 200g feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and halved
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • Fresh mint leaves for garnish

Instructions

1. Prepare the Crust:

  1. In a bowl, combine tomatoes, cucumber, red onion, and bell pepper. Toss gently.
  2. In a separate small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
  3. Layer the vegetable mixture, feta cheese, and olives in individual serving rings or glasses, pressing lightly between layers.
  4. Drizzle the dressing over each tower and garnish with fresh mint leaves before serving.
