For the Crust:
- 2 large tomatoes, diced
- 1 cucumber, peeled and diced
- 1 red onion, thinly sliced
- 1 green bell pepper, diced
- 200g feta cheese, crumbled
- 1/4 cup Kalamata olives, pitted and halved
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and black pepper to taste
- Fresh mint leaves for garnish
Instructions
1. Prepare the Crust:
- In a bowl, combine tomatoes, cucumber, red onion, and bell pepper. Toss gently.
- In a separate small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
- Layer the vegetable mixture, feta cheese, and olives in individual serving rings or glasses, pressing lightly between layers.
- Drizzle the dressing over each tower and garnish with fresh mint leaves before serving.
