For the Crust:
- 2 lbs Yukon Gold potatoes, cut into wedges
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 oz feta cheese, crumbled
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- Toss potato wedges with olive oil, garlic, lemon juice, oregano, salt, and pepper in a large bowl.
- Spread potatoes in a single layer on a baking sheet and roast for 25-30 minutes, flipping halfway, until golden and crispy.
- Remove from oven, sprinkle with crumbled feta and lemon zest, and return to oven for 5 minutes.
- Garnish with fresh parsley before serving.
