For the Crust:
- 4 large ripe tomatoes, cut into wedges
- 1 cucumber, peeled and sliced
- 1 red onion, thinly sliced
- 1 green bell pepper, sliced
- 1 cup Kalamata olives, pitted
- 200g feta cheese, cubed
- 1/4 cup extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine the tomatoes, cucumber, red onion, bell pepper, and olives.
- Gently fold in the cubed feta cheese, being careful not to break it up too much.
- In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper. Pour the dressing over the salad and toss lightly to coat.
- Serve immediately or chill for 15 minutes to let the flavors meld.
