For the Crust:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup tahini
- 3 tbsp fresh lemon juice
- 2 cloves garlic, minced
- 3 tbsp extra virgin olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped Kalamata olives
- 1/4 cup diced cucumber
- 1/4 cup diced cherry tomatoes
- 1 tbsp chopped fresh dill
- 1 tbsp chopped fresh parsley
Instructions
1. Prepare the Crust:
- In a food processor, combine chickpeas, tahini, lemon juice, garlic, 2 tbsp olive oil, salt, and pepper. Blend until smooth and creamy, scraping down sides as needed.
- Spread the hummus evenly on a serving plate, creating a slight well in the center.
- Top with feta cheese, Kalamata olives, cucumber, cherry tomatoes, dill, and parsley.
- Drizzle with remaining 1 tbsp olive oil and serve immediately with pita bread or fresh vegetables.
