For the Crust:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 3 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped Kalamata olives
  • 1/4 cup diced cucumber
  • 1/4 cup diced cherry tomatoes
  • 1 tbsp chopped fresh dill
  • 1 tbsp chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. In a food processor, combine chickpeas, tahini, lemon juice, garlic, 2 tbsp olive oil, salt, and pepper. Blend until smooth and creamy, scraping down sides as needed.
  2. Spread the hummus evenly on a serving plate, creating a slight well in the center.
  3. Top with feta cheese, Kalamata olives, cucumber, cherry tomatoes, dill, and parsley.
  4. Drizzle with remaining 1 tbsp olive oil and serve immediately with pita bread or fresh vegetables.

Notes

You can customize the seasonings to taste.
