Description

A vibrant and creamy hummus topped with fresh Greek-inspired vegetables, olives, and feta cheese, perfect for dipping or as a healthy appetizer.


Ingredients

For the Crust:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 3 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup diced cucumber
  • 1/4 cup diced cherry tomatoes
  • 2 tablespoons chopped Kalamata olives
  • 2 tablespoons crumbled feta cheese
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon dried oregano

Instructions

1. Prepare the Crust:

  1. In a food processor, combine chickpeas, tahini, lemon juice, garlic, 2 tablespoons olive oil, salt, and pepper. Blend until smooth and creamy.
  2. Spread the hummus evenly on a serving plate, creating a slight well in the center.
  3. Top with diced cucumber, cherry tomatoes, Kalamata olives, and crumbled feta cheese.
  4. Drizzle with remaining 1 tablespoon olive oil and sprinkle with parsley and oregano.
  5. Serve immediately with pita bread, crackers, or fresh vegetables.

Notes

You can customize the seasonings to taste.
