For the Crust:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup tahini
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 1/4 cup diced cucumber
- 1/4 cup diced tomatoes
- 2 tablespoons sliced Kalamata olives
- 2 tablespoons crumbled feta cheese
- 1 tablespoon chopped fresh parsley
Instructions
1. Prepare the Crust:
- In a food processor, blend the chickpeas, tahini, olive oil, lemon juice, garlic, cumin, salt, and pepper until smooth.
- Transfer the hummus to a serving platter and spread it evenly.
- Top the hummus with cucumber, tomatoes, olives, feta, and parsley.
