For the Crust:
- 1 lb cheese tortellini, cooked and cooled
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and halved
- 1 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 3 tbsp fresh lemon juice
- 1 tsp dried oregano
- 1 garlic clove, minced
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Cook the tortellini according to package instructions, then drain and rinse under cold water to cool.
- In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, oregano, minced garlic, salt, and pepper to make the dressing.
- Pour the dressing over the pasta mixture and toss gently until everything is evenly coated.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld before serving.
