A vibrant and refreshing pasta salad featuring cheese tortellini tossed with classic Greek ingredients like feta, olives, and a zesty lemon-herb dressing.


Ingredients

For the Crust:

  • 1 lb cheese tortellini, cooked and cooled
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup Kalamata olives, pitted
  • 1 cup crumbled feta cheese
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Cook the tortellini according to package directions, then drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooled tortellini, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper to make the dressing.
  4. Pour the dressing over the pasta mixture and toss gently until everything is well coated.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Garnish with fresh parsley before serving.
