Description

A vibrant, shareable board featuring creamy green goddess hummus topped with crispy chickpeas, fresh cucumber, and herbs, perfect for dipping or as a light meal.

For the Crust:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 2 tbsp fresh chives, chopped
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1/4 cup olive oil, plus extra for roasting
  • 1 tsp salt, divided
  • 1/2 tsp black pepper
  • 1 large cucumber, sliced
  • 1/2 tsp smoked paprika
  • Assorted crackers or pita bread for serving

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Pat chickpeas dry, toss with 1 tbsp olive oil, 1/2 tsp salt, and smoked paprika. Spread on a baking sheet and roast for 20-25 minutes until crispy.
  2. In a food processor, combine tahini, parsley, basil, chives, lemon juice, garlic, 1/4 cup olive oil, remaining 1/2 tsp salt, and pepper. Blend until smooth.
  3. Add half the chickpeas to the processor and blend until creamy. Transfer hummus to a serving bowl.
  4. Arrange the hummus bowl on a board. Top with remaining crispy chickpeas and arrange cucumber slices around it. Serve with crackers or pita.

Notes

You can customize the seasonings to taste.
