For the Crust:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup tahini
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 2 tbsp fresh chives, chopped
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1/4 cup olive oil, plus extra for roasting
- 1 tsp salt, divided
- 1/2 tsp black pepper
- 1 large cucumber, sliced
- 1/2 tsp smoked paprika
- Assorted crackers or pita bread for serving
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Pat chickpeas dry, toss with 1 tbsp olive oil, 1/2 tsp salt, and smoked paprika. Spread on a baking sheet and roast for 20-25 minutes until crispy.
- In a food processor, combine tahini, parsley, basil, chives, lemon juice, garlic, 1/4 cup olive oil, remaining 1/2 tsp salt, and pepper. Blend until smooth.
- Add half the chickpeas to the processor and blend until creamy. Transfer hummus to a serving bowl.
- Arrange the hummus bowl on a board. Top with remaining crispy chickpeas and arrange cucumber slices around it. Serve with crackers or pita.
