For the Crust:

  • 2 boneless, skinless chicken breasts
  • 2 medium sweet potatoes, peeled and cubed
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons lime juice
  • 1/4 cup chopped cilantro

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400°F (200°C). Toss sweet potato cubes with 1 tablespoon olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender and golden.
  2. Season chicken breasts with garlic powder, salt, and pepper. Grill over medium-high heat for 6-7 minutes per side until cooked through. Let rest for 5 minutes, then slice.
  3. In a bowl, combine avocado, cherry tomatoes, red onion, lime juice, cilantro, and remaining olive oil. Gently toss to coat.
  4. Assemble bowls by dividing roasted sweet potatoes, sliced chicken, and avocado salad among four bowls. Serve immediately.
