For the Crust:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1 cup cooked quinoa or brown rice
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup corn kernels (fresh or canned)
- 1 avocado, mashed
- 1 lime, juiced
- 2 tablespoons cilantro, chopped
- 1/4 red onion, finely diced
Instructions
1. Prepare the Crust:
- Season chicken breasts with olive oil, chili powder, cumin, salt, and pepper. Grill over medium-high heat for 6-8 minutes per side until cooked through. Let rest, then slice.
- Prepare the base by dividing cooked quinoa or brown rice among four bowls.
- In a bowl, combine mashed avocado, lime juice, cilantro, red onion, and salt to make the guacamole.
- Arrange sliced chicken, cherry tomatoes, cucumber, and corn over the quinoa in each bowl.
- Top each bowl with a generous scoop of guacamole and serve immediately.
