Description

Tender grilled chicken bites served in a rich cream sauce, accompanied by crispy herb potatoes and a savory olive-mushroom medley.


Ingredients

For the Crust:

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 1 lb baby potatoes, halved
  • 1 cup sliced mushrooms
  • 1/2 cup pitted Kalamata olives, halved
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Preheat grill or grill pan to medium-high heat. Season chicken bites with salt, pepper, and half of the thyme and rosemary. Grill for 5-7 minutes per side until cooked through and lightly charred. Set aside.
  2. In a large skillet, heat olive oil over medium heat. Add potatoes and cook for 15-20 minutes, stirring occasionally, until golden and tender. Season with remaining herbs, salt, and pepper. Remove from skillet and set aside.
  3. In the same skillet, add mushrooms and garlic. Sauté for 5 minutes until mushrooms are softened. Add olives and heavy cream, stirring to combine. Simmer for 3-4 minutes until sauce thickens slightly. Return chicken bites to skillet, tossing to coat in the cream sauce.

You can customize the seasonings to taste.
