A vibrant and hearty Greek salad bowl featuring juicy grilled chicken, crisp vegetables, and a creamy homemade tzatziki sauce that brings it all together.


Ingredients

For the Crust:

  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 4 oz feta cheese, crumbled
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and squeezed dry
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped
  • 1 clove garlic, minced

Instructions

1. Prepare the Crust:

  1. Season chicken with olive oil, oregano, garlic powder, salt, and pepper. Grill over medium-high heat for 6-7 minutes per side until cooked through. Let rest, then slice.
  2. In a bowl, combine Greek yogurt, grated cucumber, lemon juice, dill, and minced garlic. Mix well and refrigerate until ready to serve.
  3. Assemble bowls with romaine lettuce as the base. Top with cherry tomatoes, diced cucumber, red onion, Kalamata olives, and crumbled feta.
  4. Add sliced grilled chicken to each bowl and drizzle generously with tzatziki sauce. Serve immediately.
