For the Crust:

  • 1 lb boneless, skinless chicken breasts
  • 1 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 6 cups mixed greens
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup sliced almonds
  • 1/2 cup plain Greek yogurt
  • 2 tbsp fresh lemon juice
  • 1 tbsp chopped fresh dill
  • 1 tbsp chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. Season chicken with olive oil, garlic powder, paprika, salt, and pepper. Grill over medium-high heat for 6-7 minutes per side until cooked through. Let rest, then slice.
  2. In a small bowl, whisk together Greek yogurt, lemon juice, dill, and parsley to make the creamy herb yogurt dressing.
  3. In a large bowl, combine mixed greens, cherry tomatoes, red onion, and sliced avocado. Top with grilled chicken slices and drizzle with the yogurt dressing.
  4. Garnish with sliced almonds and serve immediately.
